Adapted from Cooking Light
Ingredients:
1 c flour
¼ c packed brown sugar
1 ½ t baking powder
¼ t salt
½ t cinnamon
½ t ginger
¼ t nutmeg
1 egg
1 T vegetable oil
1 c milk
1/3 c pumpkin puree
Directions:
Whisk dry ingredients (through nutmeg) in a medium bowl.
In a small bowl, combine wet ingredients and then stir into dry mix.
Let stand 5 minutes, then cook on griddle.
Nutrition Information:
¼ c batter per pancake; makes 8-10 pancakes
2 pancakes = 226 cal, 5 g fat, 1.6 g fiber
