3 cups flour (or 1 1/2 c all purpose, 1 1/2 c whole wheat)
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 Tbsp cinnamon
1/2 c milk
1/2 c vegetable oil
1 1/2 c white sugar
1 Tbsp vanilla
3 c grated zucchini
1 c chopped walnuts (optional)
- Preheat oven to 350 degrees F. Grease and flour two loaf pans.
- Whisk dry ingredients (through cinnamon) in a small bowl.
- Beat eggs, milk, vegetable oil, sugar, and vanilla extract together in a large bowl. Add dry ingredients and beat well. Stir in zucchini (and walnuts) until well combined. Pour batter into prepared pans.
- Bake in preheated oven until toothpick inserted in center of bread comes out clean, 40 to 60 minutes. Cool in pans on a wire rack for 20 minutes. Remove bread from pan and cool completely.
