Crockpot Applesauce

8 large apples, peeled and cored (I used fuji)
2 cinnamon sticks
3/4 cup apple juice
2 Tbsp lemon juice
1-2 tsp vanilla
2 Tbsp maple syrup (or sugar or honey)

Place all ingredients in crockpot, stir, and cook 3-4 hours on high or 6-8 hours on low. Mash to desired consistency.
